Course Outline

This course aims to equip students with the skills and knowledge necessary to operate at an entry level in the field of hospitality across a range of disciplines. It will allow students to gain the relevant industry licences that are required in the industry, such as a liquor licence and food safety certificate.

Course Content

A minimum of 63 credits is required from the following:             

167         Practise food safety methods in a food business

4637      Demonstrate knowledge of New Zealand Wines and wine producers

4646      Demonstrate knowledge of the sales of liquor act 1989 and its implications for licensed premises

13272    Cook food by baking in a commercial kitchen

13281    Prepare and present basic sandwiches for service in a commercial kitchen

13283    Prepare and present salads for service in a commercial kitchen

13285    Handle and maintain knives in a commercial kitchen

14420    Demonstrate knowledge of alcoholic and non-alcoholic beverages

14422    Provide a beverage service to tables in a licensed commercial environment

14424    Prepare and serve alcoholic cocktails in a licenced commercial environment

14426    Prepare, take orders and serve bottled wine in a licensed commercial environment

14434    Prepare and clear areas for table food service in a commercial hospitality environment

14436    Provide basic table service in a commercial hospitality environment

14462    Maintain personal presentation and greet customers in the hospitality industry

14463    Prepare for and handle payment transactions in the hospitality industry

14464    Deal with customer complaints in the hospitality industry

16705    Demonstrate knowledge of Host Responsibility requirements as a duty manager for licensed premises

Career Opportunities

New Zealand's hospitality and tourism services industry has experienced significant growth in the last decade, and the trend is set to continue. Career opportunities include working in cafés, coffee shops, bistros and taverns.

Application Criteria

  • All applicants should demonstrate a keen interest in hospitality and have academic attributes which indicate they have a reasonable likelihood of successful completion of the programme. 
  • Applicants must be prepared to meet the work ethic required for a career in the hospitality industry.
  • Applicants should be a minimum of 17 years of age, with a minimum of four years’ secondary education.
  • School leavers should have attained a minimum of 12 NCEA credits at Level 2 in each of four subjects.
  • People over the age of 20 without formal school qualifications are welcome to apply.
  • Applicants must have a high level of personal presentation.

 

(Please note: students must be 18 years of age to gain their Liquor Licence Certificate as part of this programme.) 

 

International students

Applicants whose first language is not English, or who come from a country where the language of instruction in schools is not English, must provide evidence of having successfully completed English instruction to a level deemed appropriate by the head of faculty. Evidence may include official transcripts and/or recognised English test results, such as IELTS and TOEFL. 

Satisfactory Completion

For students to be considered to have satisfactorily completed this programme, and be eligible for award of the qualification Certificate in Café and Bar Service, they must have: Attended for not less than 80% of the timetabled class hours and other scheduled learning activities relating to the programme. Completed all scheduled course work requirements and assessments. Successfully completed assessment requirements for all modules/unit standards and or local units, and achieved a total of 63 credits.
